A long time ago, a lot of goods had been sent into Osaka from Hiroshima which was the main distribution hub in the Setouchi region. Among those, the Hiroshima’s laver was well known for its high quality in a historic fishing ground following Edo.
Yoshihito Mimura, who was the founder of Mikuniya, was born into Masutarou Mimura who owned one of the local’s foremost fishing industries in such city of Hiroshima. He had established NORI seaweed processing company in Asahi town with a strong relationship with laver as well as passion.
After the World War Ⅱ , Hiroshima’s NORI seaweed fishing ground which had been in business since the Edo period disappeared due to the land reclamation, but the vitality and the attachment to laver are alive even now in Mikuniya.
Our purchasing department visits the market, and buys high-quality ingredients that satisfy not only general customers, but also people who especially devote to food industry.
Using NORI that meets various conditions such as color, aroma, and taste, toasted carefully with the right amount of salt that is suitable for the quality of NORI.
Seasoned with our secret sauce that’s made from stewed selected ingredients such as Setouchi dried shrimp.
This is our Mikuniya’s“NORI” that we would want anyone who purely loves them to enjoy, that is our Mikuniya’s NORI.
MIKUNIYA’s business principle is based on
“osumi-tsuki” (authoritative assurance) of the sushi Chef.
We are the maker of the highest-grade Japanese NORI ( seaweed) in Hiroshima Japan. We have been producing our
nori for almost 100 years. We visit NORI production areas all over Japan every winter to buy only the best quality
NORI with crispy texture and the flavor of the ocean.
Almost eight billion pieces of NORI are harvested and processed by fishermen in Japan every year. MIKUNIYA buys
super top quality NORI in the auction. Out of those 8 billion pieces, only 3% is of super top quality, and MIKUNIYA
buys all of them every year.
A lot of sushi Chefs and Japanese restaurant chefs love to use our NORI. We have about a thousand sushi bars and
Japanese restaurants as our customers in Japan alone. In addition, we have started to export our NORI to Europe
since 2008 because Michelin star sushi bars in London and Paris prefer to use our NORI. Outside Japan, there are
several hundred sushi bars and Japanese restaurants that use our NORI today.
When it comes to retail, almost all high-end Japanese department stores and grocery stores started selling our NORI
as the highest-grade NORI. Since then many regular customers have become big fans of our NORI.We hope to
continue to promote our high quality NORI all over the world.
Auction for NORI
We participate in more than 20 NORI auctions during the harvest season from November to March every
year. There are several hundred of NORI samples displayed in the auction and we find the best-quality
NORI from them.
Ariake sea is the best production area for the highest grade Japanese NORI like Bordeaux and Bourgogne
for French wine because a lot of rivers with nutrient-rich water flow into Ariake sea that makes it
ideal for the growth of NORI.
Even though there are over 1000 NORI makers in Japan, only 40 makers have rights to bid for NORI in
the auction. MIKUNIYA has that valuable right and we make a successful bid for the highest-grade NORI
every year because we have the highest market share of it.
Shop & Event
MIKUNIYA-NORI is sold as the highest-grade NORI in almost all Japanese depart ment stores and grocery stores. We are sometimes invited to food events by the department stores in Japan and overseas such as the event for the demonstration of how to make sushi rolls in Bon Marche in Paris.
